As a home baker who loves to test and try new recipes on family and friends, I’ve recently been testing out ways to make some classic mini cakes and desserts for one or two people. When you only have a serving for one, you can rest assured you won’t go for another piece. That’s the upside of this goodie single serving cake recipe.
This recipe came about after countless efforts to get cake in a mug recipes right. When trying some of these recipes, I haven’t found one that I love. There’s something unappealing that happens to the texture of cake when it’s cooked in the microwave.
So, the solution was simple: bake it in the oven. All you need is a a baking ramekin. This single serving cake recipe comes out perfect in the oven and is so super satisfying you won’t crave another piece.
Top it with some powdered sugar, whipped cream and berries and indulge without any of the guilt!

Mix butter, cream cheese and vanilla in a small bowl. Add flour, baking powder, salt, sugar, and mix with a spoon. After beating one egg, carefully add 2 tsp of beaten egg into the mix. Stir to combine. |
