Easy Coconut Milk Chocolate Ice Cream

Want something sweet but can’t eat dairy? This Coconut Milk Chocolate Ice Cream is just what you need. What’s great about making this dessert at home, is that you can control the ingredients, mainly the sugar content.
Using only a handful of ingredients, including coconut milk as the base, this chocolate ice cream is super simple to prepare, and the best part is that you don’t need an ice cream maker.
The result is just as decadent-tasting as the real thing, but lighter on your digestion.
Coconut Milk Chocolate Ice Cream
Ingredients:
2 cans of full-fat coconut milk
3 cup cocoa powder
1/2 cup sweetener of your choice. (xylitol, regular sugar or maple syrup)
2 teaspoons vanilla extract
Instructions:
Combine all of the ingredients in a blender, and blend until smooth and creamy.
At this point, give your cream base a little taste. If you need more sweetness or flavoring add a bit more until you get the flavor you desire.
Pour into a freezer-safe container. Place in the freezer for 4-6 hours, or until firm.
When you are ready to serve, allow the coconut ice cream to thaw at room temperature for a few minutes to soften. It will be much easier to scoop out that way.
