Summer Fruit Pastry Galette
If you don’t live in a tropical climate you’re probably just as excited as I am when summer fruit season hits. There’s nothing better than to bite into a juicy peach or plump cherry when they’ve just been picked from your local farm. This is when a summer fruit pastry galette becomes a perfect summer dessert.
This is when baking becomes spectacular. Even if you’re not a great baker, making a fresh, crispy sweet pastry galette is easy and impressive. It’s a light dessert you can serve any time of day. I personally love a great pastry for breakfast or with a great cup of coffee. Very European!
I’ve made two fruit options for this recipe. Both use a base of vanilla custard. If using peaches, slice them thin and place over custard mix. I then sprinkle a bit of cinnamon sugar to cover the tops. I find that when I do this, I get less water from the peaches because they’re not soaking in a mix. this helps for making a crispy pastry galette.
If using cherries, I mix them separately in a both with sugar and vanilla just until combined. Don’t let them soak for too long. Place them on the custard pastry dough immediately after mixture and sprinkle with almonds and bake.
These pastry galettes are super simple and you’ll make them time and again.
Summer Fruit Pastry Galette Recipe
- 1 box of All-Butter Puff Pastry
- 1/4 cup melted butter (for speading onto pastry
- 1/4 cinnamon sugar (1/4 cup white sugar and 1 tsp of cinnamon mixed)
- Custard Powder (such as Horne’s)
- 1 cup of whole milk
- 1 tbsp sugar
Peach Blueberry Topping (your choice)
- 4 Peaches, halved and sliced
- 1/4 Blueberries
- 1 tbsp white sugar for sprinkling on peaches
- 2 cups of cherries, pitted and cut in half
- 1 tbsp of white sugar
- 1 tsp vanilla extract
- 1/4 sliced almonds
Preheat oven to 40oº C.
Prepare the custard according to package directions and chill.
Spread out defrosted puff pastry sheet on a wood board and gently score a 1 ” border around the perimeter. This allows the pastry to puff up around the pastry galette. Sprinkle some white sugar and cinnamon directly on the dough.
Next, spread about a 1/2 of prepared custard mixture onto the pastry.
If using peaches, place peaches uniformly over the custard mixture to cover entire rectangle. Sprinkle some cinnamon sugar over the white peaches.
If using cherries, mix pitted halved cherries with tsp of vanilla and a 1 tbsp of white sugar. Then, place each half uniformly over the custard on the pastry dough. Sprinkle with sliced or slivered almonds.
Enjoy a slice on its own, or serve with vanilla ice cream.
